Defterin sayfalar\u0131nda renkleri solmu\u015f moda \u00e7izimleri vard\u0131 ve ellili y\u0131llar\u0131 o \u00e7izimlerden tahayy\u00fcl edebiliyordum. P\u00fcsk\u00fcler aras\u0131ndan \u201ckurtar\u0131lm\u0131\u015f\u201d defterin her taraf\u0131 kullan\u0131lmaktan h\u0131rl\u0131m p\u0131rt\u0131m bir vaziyetteydi.<\/p>\n<p>Defteri okurken, \u201cPo\u015fe\u201d yumurtayla y\u00fcz y\u00fcze gelince, Avrupal\u0131la\u015fma merak\u0131m\u0131z\u0131n yemek k\u00fclt\u00fcr\u00fcm\u00fcze ve tarihimize yeni bir sayfa a\u00e7t\u0131\u011f\u0131n\u0131 hemen seziverdim. Po\u015fe de nedir diyorsunuzdur \u015fimdi! Zeytinya\u011f\u0131, limon suyu gezdirilecek, tuz, karabiber serpi\u015ftirilecek, maydanoz k\u0131y\u0131lacak. Bunlar hemen \u0131l\u0131k makarnaya eklenecekmi\u015f. San\u0131r\u0131m \u0130stanbul\u2019a Be\u015fikta\u015f\u2019a ilk ta\u015f\u0131nd\u0131\u011f\u0131m\u0131zda kald\u0131\u011f\u0131m\u0131z \u00f6\u011frenci evinde esnaf bir abimizin e\u015fi k\u0131ymetli Sevgi Han\u0131m \u00f6\u011frenciyiz diye baz\u0131 ak\u015famlar \u00e7ocu\u011fuyla yemek g\u00f6nderirdi eve. \u00c7ok kibar, nazik ve iyilik sever biriydi. Bazen kabuklar\u0131 a\u00e7\u0131larak, limon s\u0131k\u0131larak \u00e7i\u011f istiridye g\u00f6nderdi\u011fini de hat\u0131rl\u0131yorum; bir yaz \u00f6\u011flen vaktinde. Alafranga ge\u00e7inmeye \u00e7al\u0131\u015fan k\u00fcpeli, uzun sa\u00e7l\u0131, entel dantel bir arkada\u015f\u0131m\u0131z\u0131n bile bu ikramdan hi\u00e7 ho\u015flanmad\u0131\u011f\u0131n\u0131, hatta fenal\u0131k ge\u00e7irdi\u011fini bile hat\u0131rl\u0131yorum\u2026<\/p>\n<p>Belki an\u00e7uezli makarna daha alengirli yap\u0131l\u0131yor olabilirdi. Hatta lezzetli de olabilirdi. Belki o yeme\u011fi denemek gerek&#8230; Yine &#8220;3 nolu makarna&#8221; ha\u015fland\u0131ktan sonra so\u011fuk sudan ge\u00e7irilecek, s\u00fcz\u00fclecek. Bu arada sebzeler ince k\u0131y\u0131m do\u011franm\u0131\u015f, ya\u011fda hafif kavrulmu\u015f olacakm\u0131\u015f. Sebzeleri de hemen sayal\u0131m: Bir adet havu\u00e7, bir adet so\u011fan, bir adet irice domates, iki adet kereviz ve iki y\u00fcz elli gram bezelye. Yaln\u0131z, bezelye kavrulmayacak; su ve domates sal\u00e7as\u0131 il\u00e2vesiyle yar\u0131m saat kadar pi\u015firilecekmi\u015f. Bu arada be\u015f an\u00e7uezin \u201ckemikleri\u201d \u00e7\u0131kar\u0131lacak.<\/p>\n<p>Kemiklerde gene durakald\u0131m. Benim bildi\u011fim an\u00e7uez -kimi iml\u00e2 k\u0131lavuzlar\u0131ndaki yaz\u0131m\u0131yla an\u00e7\u00fcez-, sardalyadan, hamsiden yap\u0131l\u0131r! Hatta ezmesini de severim.
